Honey garlic tenderloin

Our New Years Eve tradition meal. Umami, rich, sweet, the perfect way to send off the old year.

Ingredients

• 1 Pork tenderloin • 1 1/2 tbsp olive oil • 3 garlic cloves, chopped • 1/2 tsp garlic powder • 1/2 tsp paprika • 1/2 tsp salt • 1/2 tsp black pepper • 3 tbsp rice vinegar • 1 1/2 tbsp low sodium soy sauce • 1/2 cup of honey

Method

• Preheat oven to 180°c (with fan) • Mix rice vinegar, soy sauce and honey in a bowl • Mix garlic powder, paprika, salt and pepper in another bowl • Rub spice mixture onto the tenderloin • Heat olive oil in a large oven-proof skillet, over hight heat (or non-oven-proof, but have a oven-safe dish at hand) • Add tenderloin, and sear until golden all over • Once tenderloin is seared, add garlic and cook until golden • Add sauce, and turn pork in until • Place skillet (or oven safe dish) into the oven, and cook until tenderloin reaches 68°c (approx. 15 • 18 minutes) • Remove pork to a plate, cover with tinfoil, and leave to rest for 5 minutes. • (If you didn't use an oven-proof skillet) Place skillet back onto the stove with the sauce, and reduce at high heat for 5 minutes. • Cut pork into thick slices, and pour sauce over it, then serve.
